Hello. Is this thing on?
I know you think I’ve abandoned you but I promise I’m still here – quietly pondering all of the recipes I’d like to make and share for you. 2020 and even 2021 has been doozy but we’re pushing through and remaining positive nonetheless.
The truth is, I’ve cooked quite a few things in this new season of life (hello parenthood), I just haven’t had the time to style, photograph and share my creations with you but I hope that changes soon (fingers crossed). While I won’t promise a specific number of new posts a week, or even in a month for that matter, I will tell you that I want nothing more than to share my love of eating, drinking and frolicking with you. Between being home 24/7, keeping our tiny human alive and work, there just isn’t enough time to also write blog posts. But I love it so much so I’m going to figure this out!
Nowadays, I share some of my food creations on Instagram mainly and it’s typically quick meals I can make in between John and I trying to keep an eye on Mason or getting her ready for bed. While time may not be on our side, we don’t cut corners on flavor. And that brings me to today’s recipe.
Faux filet-o-fish
OK, obviously a filet-o-fish is a sandwich from McDonald’s and I must confess: I’ve never had one. But one day, we were menu planning and I had a random idea to make fish sandwiches. Not the type of yummy sandwiches you’d get from Chatt Smokehouse or Uncle Larry’s (if you live in Chattanooga, you know what I’m talking about). I’m making a lazy version but still with a little bit of zest added to it.
There’s nothing in this sandwich that’s “homemade” and it’s a far cry from a recipe but we loved it and definitely will make it again. Here’s the non-recipe.
Faux filet-o-fish
Ingredients
- 4 fish fillet breaded squares (purchased from Whole Foods)
- 4 brioche buns
- Mayo
- Sriracha
- 4 slices sharp cheddar cheese
- Lettuce, shredded
- Honey
- Lime juice, fresh
- Apple cider vinegar, just a splash
- Kosher salt & black pepper
- Pickles (I used bread & butter pickles)
Instructions
- Heat oven to 425.
- Make spicy mayo: combine your favorite mayo with some sriracha and stir. Taste until it reaches your desired level of spice. Set aside.
- Once the oven has heated, cook the fish squares according to the package and flip halfway through baking so they get crispy.
- While the fish is baking, place a handful of lettuce in a bowl and toss with honey, fresh lime juice, vinegar and salt & pepper.
- After the fish has cooked, place them on a different platter and use the same baking sheet to toast your buns.
- Build your sandwich: Spread some spicy mayo on your bread, layer with a fish fillet, cheese, lettuce and pickles.
I love this idea! I am a big fan of using fish sticks or battered fish filets in fish tacos, and this makes great sense too!
