I’ve always loved fish but lately, it has been my absolute go-to to cook (when I have time to cook dinner) because it’s so quick and easy. Fish takes no time to prep and I can even do it while constantly chasing after a 1 1/2-year-old. To be honest, though, I’m kinda in shock that I’m actually writing about one of my recent roasted salmon recipes seeing as though I first made it and photographed it back in August. The fact that it’s November now – who cares, right?
Anyway, my current salmon obsession comes from Trader Joe’s. I absolutely love buying big slabs of salmon from there (that’s probably not the correct verbiage to use but you get the point). The salmon is reasonably priced and the quality isn’t bad at all. In fact, now that we’ve found this gem at Trader Joe’s, it is consistently on our grocery list so we can make sure we always have some in the freezer.
Do it. You won’t regret it I promise.
How to: roasted salmon & corn salsa
If you’re a parent, particularly of a young child, this recipe is great because it’s essentially hands-off. Even if you’re not parenting a tiny terrorist but maybe you’re just short on time like all of us, this recipe is fantastic. Season the fish and go about your business.
And speaking of my obsession with Trader Joe’s salmon, the corn salsa that I used on this fish? Another Trader Joe’s favorite. We keep at least two jars of it in the house.

Ingredients
- A pound (or more if you like) of salmon
- Olive oil
- Salt & pepper
- Trader Joe’s Everything bagel seasoning
- Cilantro
- Trader Joe’s corn salsa
Instructions
- Heat oven to 400 degrees.
- Place the salmon on a baking sheet and drizzle with olive oil then season with salt, pepper and everything bagel seasoning.
- Bake for 12-ish minutes (can bake longer depending on how ‘well done’ you prefer your salmon).
- Remove from oven and top with cilantro and corn salsa.
