Flaky Spinach and Cheese Pastries

I’ve been watching “Veep”. I watched a few episodes a really long time ago then forgot about it. Then earlier in 2018, I restarted it then…yup – I forgot again. So here we are again, watching “Veep”. I’ve made it much further this time around (currently on season 5). Last year around the holidays, I decided to watch “The Night Of” (wonderful holiday television, right?). Have you seen that? It’s fascinating and so good.

OK, there’s a reason why I’m talking about television shows right now. I’m working on a small gathering to watch the premiere of “Broad City”. When coming up with ideas, easy appetizers (like these spinach and cheese pastries) obviously come to mind. I have to be honest though, I probably won’t be serving these at the “Broad City” watch party but they’re still delicious nonetheless. There are certain memorable episodes of “Broad City” that I’ll probably have represented and I don’t remember an episode focused on spinach and cheese pastries.

I’ve always wanted to host premiere parties for shows I like but I always get too bogged down into the details and I exhaust myself. So, naturally that results in me sitting in bed (or on the couch) watching said show with John and a bag of snacks. I wanted to host a party for “Insecure” and I failed. Maybe this year (probably not though).

What shows are you excited about this year? I sound like a TV junkie here BUT there are so many shows finally returning this month (January) and I cannot wait. Since you asked, here’s what I’m excited for:

  • “Friends From College”
  • “True Detective”
  • “Broad City” (duh)
  • “You’re the Worst”

Just know that these spinach and cheese pastries are perfect for all of your TV-watching pleasure. Now, for the second portion of this post: this is not my recipe. Oftentimes on Eat.Drink.Frolic., I share recipes from other food writers I’m fond of and this is one of them. I try to get a blend of recipes from others and my recipes. I like variety and quite honestly, sometimes my brain is just too tired to develop my own recipes.

OK – moving on. I found this appetizer idea on Half Baked Harvest – a site I love. Best of all, it doesn’t require you to make your own pastry dough (who has time for that?). The level of ease with this recipe is perfect for novice bakers and folks who will be hosting a TV premiere parties because they don’t take too much of your time. SCORE!

Something that is not at all necessary for this recipe but it’s a kitchen tool I love to use is a cheesecloth. You know what these are, right? They’re used in cheese-making (obviously) and even though I don’t make cheese at home, I do love them for squeezing out moisture in foods that need it – like the spinach in this dish. The recipe also calls for an optional everything bagel seasoning, which I couldn’t find anywhere. If you have time, you can order some on Amazon or just do without it. The choice is yours.
