I’m laughing so hard right now because I just shared a Brussels sprouts recipe last week. I swear I was kidding when I said I was going to turn this blog into a strictly Brussels sprouts recipe blog – or was I? I’m on a mission to turn sprouts haters into lovers. Trust me, I was not a fan of Brussels until I started making them myself. Today’s recipe is one more the books, though: Brussels sprout sliders. Have you even heard of such a thing?
OK. First things first.
I started watching a new show. Well, not a new show but it’s new to me. You want to know what it is? Alright, it’s Jane the Virgin. I’ve heard lots of rumblings about this show but I wasn’t really too interested in watching it. One Saturday night, I decided to have a lazy night in eating snacks and watching TV so I decided to start a new show. The most recent season of Madam Secretary wasn’t on Netflix yet so I decided to get into something new.
I have this rule: if I start a new show, I can’t then start another one. I have to finish it out. So, wish me luck as I finish out Jane the Virgin – I’m still on season 1; it is very long. Have you watched this show? I’ll admit, it’s not my absolute favorite BUT I feel very invested at this point and I can’t turn away. Also Gina Rodriguez is gorgeous.
Easy appetizer: Brussels sprout sliders (with basil vinaigrette)
So with these sliders: think sort of like a burger slider but the buns are roasted Brussels sprouts instead. The sprouts are roasted in butter, olive oil and a bit of salt and pepper then used as the bookends for some yummy goodness in between. This recipe was inspired by something I saw over on Pure Wow but I edited it a bit and decided to serve them with the basil vinaigrette.
Let’s talk about this basil vinaigrette. It’s from What’s Gaby Cooking and I can’t stress enough how delicious it is. I made enough of the vinaigrette so that I could have some left over and I’m so glad I did that. I can’t remember everything that I drizzled this vinaigrette on but it was a lot of stuff. It was a last-minute decision to add a vinaigrette; I think these sliders would be fine without one but it makes them even more enjoyable. I mean, if I were you, I’d just make the basil vinaigrette anyway. It’s so good.
Alright let’s make these Brussels sprout sliders.
Brussels Sprout Sliders with Basil Vinaigrette
Ingredients
- Brussels sprouts, trimmed and halved
- 2 tablespoons butter, melted
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper
- Prosciutto, cut into 1-inch strips
- Mozzarella, cut into bite-sized pieces
- 1 apple, sliced into bite-sized pieces
- Toothpicks

Instructions
- Heat oven to 375 degrees. In a large bowl, toss the sprouts with the butter and olive oil; season with salt and pepper.
- Then transfer the Brussels sprouts to a baking sheet and place in an even layer, cut side down. Roast until the sprouts are tender and lightly golden (roughly 20 minutes). Allow them to cool.
- To assemble the sliders: fold a strip of prosciutto on one half of a sprout. Top with mozzarella, a an apple slice then another Brussels sprout half; secure with a toothpick.
- Repeat until done with all ingredients. Serve with vinaigrette on the side.
I love Brussel’s Sprouts – so you can never have too many for me!
