So the first time I wrote about spinach burgers on my blog was in 2012. I had given up meat for Lent and was looking for some delicious and easy recipes to try on my temporary meatless adventure. The burgers were delicious – so delicious that I continue to make them even today. Even more shocking, John loves them. I mean, they’re pretty delicious if I do say so myself. They’re light, flavorful and a little spicy (but not too much). Most of all: they’re really easy to make.
These burgers are not vegan (ya know, cheese) but you can easily substitute the cheese out for a vegan-friendly cheese if you need to. What I love most about these spinach burgers is that they’re really versatile. Each time I serve them with something different. I’ve done: pita (one of my favorites), English muffin and even without any bread – the choice is yours! One of my favorite sides to serve with these burgers is sweet potato fries. There’s just something about the combination of spicy burgers + sweet potato fries that make my taste buds really happy.
I even got crazy and made a Southwestern version of these burgers a while ago. They were yummy too – though they didn’t quite stick together like I needed them to. For that version, I added in corn and black beans and some fresh salsa to add to the flavor profile. As I describe them, I’m thinking I’ll make those again soon.
Meatless Monday: spinach burgers
So I decided to update this recipe because I needed to. The photos on the original post were not that great but the recipe is still in tact. I really wanted to showcase these burgers and so here we are. I’m trying to get better about updating old recipes. And by ‘old recipes’ I mean, posts where the photos are simply terrible. Geez, I’m learning a lot about photography.
I actually really love updating old blog posts. It gives me new content to share plus it allows me a chance to go back and revisit recipes that may need a little more work. These spinach burgers never needed more work but the photos definitely needed more help. Yikes. I hope you’ll try these burgers. I’m sure it’s weird to use the words spinach and burgers in the same breath but I promise you these are good. I’m sure the meat eaters in your life will love them because they’re just so flavorful. My mouth is watering just thinking about it.
After I cooked the burgers, I halved the pita pockets and toasted them a bit in a pan with a little olive oil. They have more flexibility when they’re warm AND just toasting them a bit gave it a bit more texture. I really love these spinach burgers if you can’t tell. See for yourself.
Easy Spinach Burgers
To drain the spinach use a cheesecloth.
Ingredients
- 1 15 oz bag of frozen spinach, thawed & drained
- 2 egg whites + 1 egg
- 1/2 tsp - 1tsp crushed red pepper
- Salt
- Pepper
- Garlic powder
- Small onion, chopped (about 1/4 cup)
- 1/4 cup - 1/2 cup breadcrumbs
- 1/2 cup shredded cheese (I used cheddar jack)
Instructions
- Combine all ingredients in a bowl and using your hands (clean hands only), mix together and make into patties.
- Heat a bit of olive oil in a pan then add the burgers and cook on each side until browned a little - 4ish minutes.
- After the burgers are done, add more olive oil and add the pita bread, if using, and toast a couple of minutes on each side.
