No, really, I am. There’s a lot going on in my life currently. Between working, normal life stuff plus fundraising for The Chattery, I’m tired. Birthday cake bread is just what one needs if you’re having a busy day or need a pick-me-up. First of all, just looking at it will lift up your spirits. SPRINKLES! Colorful sprinkles make everything look more fun, right?
So here’s the thing: I love the idea of funfetti and I love looking at sprinkles but I actually don’t like them in their ‘normal’ form. The texture throws me off. For instance, I’m never ordering ice cream and adding sprinkles to it. Crunching on sprinkles do not bring me any joy and I’d just rather not. Sprinkles baked into things, however, I can get with that.
Have you ever had a warm chocolate chip cookie with sprinkles? It’s heaven and you should definitely try that soon. It’s like the best of both worlds.
Birthday cake bread
A while a go I made funfetti scones and now it’s time to take those scones and turn it into a bread (shout out to Well Floured for the idea and inspiration). Here’s what I need you to know – you don’t have to *actually* be celebrating a birthday in order to make and enjoy birthday cake bread. Also, I want to point out that the bread isn’t overly sweet like you’d assume. It’s definitely a treat but it’s not like eating a mouth full of icing. It’s just sweet enough to step in as a yummy dessert but you can also enjoy it for breakfast along with a delicious cup of coffee (or at least that what I’ve told myself).
If baking and making stuff is therapeutic, you’ll definitely want to try this birthday cake bread. I don’t know about you but I love getting in my kitchen, putting on some music or a podcast and cooking. There’s just something about it that makes me very happy. And even with this really busy week/month I’m having, I’ve been trying to find time to still do that.
If you’re like me and having a really busy time, make sure you find some time to do something that makes you happy. Whether it’s baking, going for a walk or having a spa day – DO IT. Your mind and your body will thank you. Then, eat birthday cake bread.
Ingredients
- 1 cup of butter, room temperature
- 1 1/2 cups sugar
- 4 eggs
- 1 egg yolk
- 2 tsp vanilla extract
- 1 tsp almond extract
- 1 tsp butter flavored extract (optional)
- 2 cups of flour
- 1/2 tsp salt
- 1/3 cup rainbow sprinkles
Crumb topping
- 1/4 cup sugar
- 1/2 cup flour
- 2 tbsp cold butter
- 1/4 cup sprinkles
Instructions
- Heat oven to 325 degrees
- Prep a loaf pan with non-stick spray then line it with parchment paper.
- Using an electric hand mixer, cream together the butter and sugar, until light and fluffy.
- Add egg yolk and whole eggs, one at a time.
- Add extracts, stir well to combine then add flour and salt.
- Gently stir in the sprinkles, and pour into the loaf pan.
To make the crumb topping
- Combine 1/4 cup sugar, 1/4 cup flour, and using your fingers, rub in 2 Tbsp cold butter until it is evenly distributed; stir in 1/4 cup sprinkles
- Sprinkle the crumb topping evenly over the cake batter and bake for 60-70 minutes. Check to see if it's done. If it isn't, put it back in the oven for another 10 minutes.
- Cool in pan 10 minutes then move to a cooling rack. Let it cool completely before serving.
