As you know, I’ve been cooking my way through Chrissy Teigen’s latest cookbook, Hungry for More. It’s been a lot of fun and it has forced/allowed me to actually explore a cookbook as opposed to letting it collect dust on my shelves. I’ve covered a few other sections in this book like breakfast and salads and it feels like I have so much more to explore. I was excited to get to the snacks section and so here we are.
I love snacks. Whenever I go grocery shopping I always just have “snacks” on the list. Usually I have nothing in mind to purchase. Writing snacks on the list is just an excuse for me to roam the snacks aisle. Though I have my usual snack favorites, I love seeing snacks labeled as “NEW”. I am an advertisers dream customer. If it’s marketed as a new snack, chances are, I’m going to purchase it.
I don’t know what it is but I just love trying out new snacks. Should I start a snack club? It’s like a cookbook club instead, we all meet up and eat snacks. Doesn’t that sound fun? Or am I just being greedy.
Hungry for More: Snacks
One thing that I feel like Chrissy Teigen knows is snacks. Naturally, I felt like this section would be full of yummy foods. Here are some of the recipes you can find in this section:
- crispy coconut chicken tenders
- Thai-glazed wings
- chicken nachos
- fluffy corn dogs
That’s only a little insight into this chapter. I decided to make two recipes: Thai-glazed wings and King’s Hawaiian pull-apart bacon grilled cheese. John loves wings (my John, not Legend) so I knew he would be extra excited about that. I found both of these recipes to be pretty yummy though, I’ll admit, the bacon grilled cheese was the standout for me. Honestly, the sandwiches were pretty addictive.
We both also loved the wings. If you’ve ever used fish sauce as an ingredient you know that it has a pretty stringent smell. Don’t be discouraged by that. The wings will be yummy and the fish sauce, despite the smell, makes a wonderful ingredient. It really does. The wings call for the use of a grill which I do not have. I made adjustments by using my oven instead, which is reflected in the recipe below. You’ll have to get the book to try those addictive bacon grilled cheese sandwiches.
Thai-Glazed Chicken Wings
Ingredients
- 1 (13.5 oz) can full-fat coconut milk, shaken
- 6 tbsp fish fauce
- 6 tbsp light brown sugar
- 2 tbsp sesame oil
- 2 limes, zested and juiced
- 1 large jalapeño, chopped
- 2 tsp kosher salt
- 3 pounds of chicken wings
- Cilantro for garnish
Instructions
- In a large bowl, combine all of the ingredients (except the chicken and cilantro) and stir. Add the wings; toss to coat then cover and marinate for 24 hours.
- Heat oven to 400 degrees.
- Remove the chicken from the marinade and place the wings on an aluminum foil lined baking sheet and bake for 30 minutes. Flip the wings and bake for another 10 minutes.
