The end of summer is near and even though I hate to see it go, I can only think of one way to celebrate: an end of summer watermelon salad. Even though it’s been unbearably hot this season, summer is still my favorite time of the year. John doesn’t like watermelon (what’s wrong with him) so luckily, I got to enjoy this savory and sweet watermelon salad to myself.
To be honest, watermelon reminds me of being a child in the summer at my grandparents’ house. Whenever it was hot outside, I remember laying down newspaper and going to town on some watermelon with my cousins. I also have fond memories of noshing on crab legs too. Anyway, this salad definitely wasn’t on the menu when I was a child but it’s certainly on the menu today
Like any recipe I share here, you can swap spices however you like. This salad would be great to serve at a cookout or as an appetizer before a dinner party. The sky is the limit.
End of summer watermelon salad
This salad is a little spicy and smokey which makes the sweetness from the watermelon stand out even more.
I’m keeping this post short today because, it’s the end of summer and like you, I need to go enjoy it. By enjoy it, I probably mean go watch TV or have a cocktail. That’s probably a lame excuse for enjoying the end of summer but it’s my truth and I’m sticking to it.
Ingredients
- Watermelon, cubed
- Pinch of kosher salt
- Chili powder
- Fresh squeezed orange juice (from 1/2 an orange)
- Orange zest (just enough to spread around over the melon)
- Feta crumbles
- Mint
Instructions
- Place the watermelon in a bowl or serving dish and season with all ingredients; add the feta and mint last.
