If I’m being honest with you (which why wouldn’t I be honest here) I don’t eat breakfast that often. I love breakfast and I do eat it but I never find the time to eat it during the week. There’s something about enjoying breakfast during non-breakfast hours that really gets me excited. I know I’m not the only person who feels that way? That’s why breakfast for dinner is such a treat for me. In order for me to attempt to eat breakfast during the week, I tried these breakfast pita pockets to save *some* time.

I don’t know about you but when I’m on the go in the morning, there really isn’t a lot of time to cook a full breakfast. I like to think that I’m that type of person who prepares breakfast and coffee in the morning for John and me. Truth is: I’m not.

We were watching some show the other night and there was a scene where the parents were enjoying a lovely breakfast with their family. It looked perfect. But let’s be honest, are mornings really like that? Maybe they are. I guess if you have children they have to eat something in the morning (#shrug). Anyway, back to the breakfast pita pockets. These are pretty basic and simple. They do require some prep but I like to think you can make a big batch of them and freeze them. When you’re ready to head out in the morning, just throw them in the toaster oven and call it a day.

Lately I’ve become obsessed with pita pockets. Is that a weird thing to admit? I just love that you can stuff them with whatever you want and it gives the pocket a whole new life. My most recent adventures with pita pockets was with my “famous” spinach burgers (spoiler alert: they are delicious).

I really enjoyed these pockets and the best part is that they’re customizable. You can fill them with whatever breakfast items tickle your fancy. Mine was pretty classic: scrambled eggs (with cheese), roasted potatoes, bacon and our new favorite jam. This jam is delicious, all natural and has some really great flavors. I’m sure I’ll talk more about Trade St. Jam Co. soon – I’m obsessed.
