Earlier this year, I said I wanted to do a better job using the cookbooks I currently have and maybe even acquire some new ones. I’ve haven’t purchased many new cookbooks yet this year but I plan on it. In the meantime, I recently opened up one of my favorite cookbooks, Whip It Up, to make a yummy and very easy blackberry cobbler recipe.

The Whip It Up cookbook may be familiar to you if you read this blog.  A while back, I made these very addictive maple glazed Corn Flakes. I seriously loved these things so much. I remember making them several times over one weekend and not being able to stop snacking on them. I know this post isn’t about the Corn Flakes but I can’t help but rave about it. It’s one of the reasons I fell in love with this cookbook. Everything is just so colorful and fun to make.

There was one summer where I made cobblers quite often. I had to finally just stop. Both John and I were starting to get addicted to the buttery, classic dessert. Needless to say, I stopped making cobblers. It’s been a few years since my cobbler obsession so I figured it was time to get it going again. Here’s where this blackberry cobbler recipe comes into play.

This goes without saying but you can obviously use whatever fruit you like. Even though I like blackberries, I’ll be honest, they aren’t my favorite fruit. The flavor I love but the texture and grittiness of them really leave something to the imagination. But cobblers are also great with peaches, apples and pears. You could even get a little jazzy and try rhubarb or a combination of your favorite fruits. The choice is yours.

I loved eating the cobbler warm with a little scoop of ice cream. There’s something so comforting about warm pie-like desserts and ice creams, don’t you think? Anyway, I hope you’ll make this blackberry cobbler recipe and go get the Whip It Up cookbook. Promise me?
