Breakfast tacos are my jam but breakfast burritos are even better. Not too long ago I learned that one of my favorite taco joints in town has breakfast in the morning. Armed with this knowledge, I made a trip to Taqueria Jalisco and treated myself to a delicious breakfast burrito. It doesn’t take much to make them at home either. That’s the beautiful thing about tacos and burritos, you can just fill them with your favorite foods and call it a day.
I just had a thought though. Another local taco place here has a deep-fried burrito that is to die for. Would a deep-fried breakfast burrito be tasty? Am I doing too much?
Yes. The answer is yes. I’m always doing too much.
Anyway, this burrito is pretty easy and keep in mind that this is just a guide for making breakfast burritos. You can edit and add in your own fixings. I realized as I was taking a huge bite out of my burrito that I forgot to add in my fire-roasted tomatoes. The tomatoes would have added a little flavor and a bit of color. I still can’t believe I forgot to add them.
Sometimes I find myself doing way too many things at once, which causes me to forget important tasks when I’m cooking. I told myself I would be better at focusing on one thing at a time. I’m a work in progress though.
This breakfast burrito is full of roasted red potatoes (which I love), cheesy scrambled eggs and spicy turkey sausage. Trust me when I say this burrito is not complex so you can quickly whip it up on a weekend morning. The best part about eating this burrito is dashing it with a little bit of hot sauce.

You can use rosemary instead of thyme if you like.
Ingredients
For the potatoes
- 1/5 lb. red potatoes, quartered
- Olive oil
- 1/4 tsp. herbs de Provence
- 1/4 tsp. dried thyme
- salt & pepper
For the burrito
- Spicy turkey sausage
- 3 eggs
- Diced tomatoes
- Shredded cheddar cheese
- Flour tortillas
Instructions
For the potatoes
- Heat oven to 400 degrees.
- Place the potatoes in a bowl and drizzle with olive oil. Season the potatoes with the rest of the ingredients and toss.
- Spread the potatoes out on a baking sheet (make sure they're spaced apart well) and roast for 20 minutes or until the potatoes have softened and cooked through.
For the burrito
- While the potatoes are roasting, start to brown the sausage.
- While the sausage is browning, beat the eggs in a small bowl; season with salt and pepper.
- Add the eggs to the sausage and stir until the eggs have cooked. If you like, you can add a little cheese to the sausage and egg mixture.
- Add in the diced tomatoes and give it a good stir.
To construct
- Warm up your tortillas either in the microwave or in the oven. This makes them easier to fold.
- Add the potatoes then top with the sausage mixture.
- Add more cheese and fold it up. Enjoy!
