I write a column, twice a month for a local news site, Nooga.com. I’ve written about it here before but I’ll admit, I don’t always do a great job letting my blog readers know the column exists. My column has been around for almost four years, I think. I’ve actually lost track of time. My column, What’s Cooking, is something I love writing and even though I forget to share it here sometimes, I’m grateful that it gives me an additional platform to do what I love. Today’s post is all about easy weeknight meals which can all be found on my column.
On this blog and my column, I do a decent amount of preaching that life should be made easy in the kitchen. I wholeheartedly believe that you can have delicious and elegant meals on the table without spending countless hours in the kitchen. Life is too short to spend all of it in the kitchen.
Remember when we were younger and summer would come around and that would be the end of the school year; that was an awesome time. Then adulthood came and suddenly we still had to show up to work and “do stuff” in the summer. Even though we don’t get a summer vacation, for some reason it feels like life still slows down just a little in the summer. Then fall rolls around and we’re crazy busy again – how is that?
If you find yourself back into the craze of it all now that fall is almost here, don’t let it stress you out in the kitchen. Just because we’re busy, it doesn’t mean we don’t deserve some good food. Today, I’ve done all of the hard work for you. I’ve cooked, tweaked and narrowed this list of easy weeknight meals down to six recipes for you to try. These recipes won’t take too much of your time. You’ll still be able to cook and get back to your Netflix binge.
Six easy weeknight meals
Southwestern Quinoa Salad – I know this may not seem like a full meal but I found to be quite filling. It’s light and great on its own. It would also be perfect with grilled fish.
Slow-Cooker Creole Chicken – Nothing says easy like throwing something in the slow-cooker, right? This is one of those meals where you just combine the ingredients in the slow-cooker and basically forget about it. It’s the best.
Braised Lamb & Caramelized Onions – The title itself may not sound so easy but trust me it is. I’d suggest this meal if you’re going to have people over. It’s impressive but not time-consuming at all.
Sweet Potato & Kale Bake – I’m a sucker for a meal that can be made in the oven. I made this originally as a side for Thanksgiving dinner but the potatoes make it pretty filling.
Spicy Sriracha Shrimp Lo Mein – Not sure how “authentic” this is but it’s really flavorful and noodles are crazy easy.
Seafood Parpadelle – Pasta doesn’t have to be difficult. This one is really easy and beautiful. You could make it with a variety of seafood or make it even easier on yourself and just use shrimp. The choice is yours.
