I need to eat salmon more often. It’s delicious and extremely quick to cook. Who doesn’t love a quick meal? After a long day of work, coming home to cook seems like a daunting task unless you’re making something easy. Honey balsamic glazed salmon sounds like a fancy meal but it’s really 5 ingredients of easy goodness.
I like salmon; I actually like it a lot but I don’t eat it as much as I’d like to. Growing up, we didn’t eat a ton of it but my parents did love fresh fish. Luckily, growing up in Virginia, it was easy for us to get access to fresh fish. The last 11 years of my life, I’ve lived in landlocked areas, which gives me all types of anxiety about fresh seafood and fish. I’ve mentioned to John many times that when we retire, it must be on a coast. I need to be near water.
Even though I haven’t lived in Virginia in many, many years, there are certain things that I for sure took for granted when I lived there. I’d definitely admit that I took for granted living so close to the beach. I like to think that if we lived on or near a beach, I’d be more conscious of the foods I eat.
Who am I kidding, that’s not true.
Honey balsamic glazed salmon
Salmon can be tricky sometimes. In the blink of an eye, you can overcook it. If there’s one thing that I hate, it’s going to a restaurant, ordering salmon and having it be really dry and crumbly. Ugh, it’s so disappointing. Has that ever happened to you? If you’re afraid of overcooking salmon by throwing it in the oven, you could try another salmon favorite of mine, salmon fried rice. I need to make this again.
With this balsamic glazed salmon, drying it out won’t happen, I promise. The glaze adds a little extra moisture and flavor to the salmon. This is such an easy meal to whip up. If you’re lucky enough to have a grill (we do not), you could even grill this. I can taste it now.
Enough of me rambling, let’s make this salmon.

Ingredients
- 2 tbsp. butter
- 1/3 cup balsamic vinegar
- 1 tbsp. honey
- 2 garlic cloves, chopped
- 1 lb. salmon, cut in fillets
- salt & pepper
- lemon slices
Instructions
- Heat oven to 400 degrees
- Simmer first 4 ingredients in a small saucepan for 5 minutes; remove from heat
- Place salmon skin side down in a baking dish; season with salt and pepper
- Spoon the glaze over the salmon then top the salmon with lemon slices
- Bake uncovered for 12-15 minutes
