I’ve told you about my one time going camping, right? I was in the Girls Scouts and it was time for a camping trip. So off I went. It didn’t go very well and I haven’t been camping since but it was definitely an adventure. I got swept away in a canoe, I had to use the bathroom in the woods – I mean, it was truly an experience. On top of all of this, THERE WASN’T EVEN ANY S’MORES. Can you believe it? Today, I’m combining my love of s’mores and sweet potato pie with: sweet potato pie s’mores. Is your mouth watering?
I made my very first sweet potato pie earlier this year and it was a hit. I loooove sweet potato pie and I’m shocked that it took me so long to try to make one on my own. This pie has been in my life since I can remember. My grandmother used to make lots of sweet potato pies over the holidays and other family dinners and they were my favorite! I wonder how she would feel about my sweet potato pie s’mores?
OK so, you may have read here before that I don’t love marshmallows. I’m not in the habit of snacking on them like some folks like to do. I’m not sure what it is but I’ve never been a fan. However, I do, for some reason, enjoy s’mores. I prefer using half of a marshmallow rather than a whole one but now I’m just getting giving you extra details that don’t matter to you.
Sweet potato pie s’mores (yes!)
John and I don’t currently have a yard where we can have bonfires and make s’mores. But it’s OK because there’s a such thing as oven s’mores or indoor s’mores. This allows us to still have the flavor and satisfaction of an old fashioned s’more but without the yard and the fire.
Sounds good, right?
When I made my sweet potato pie earlier this year, I had some leftover filling that I didn’t want to waste. So I started thinking what I could do with them.
- Make more pies?
- Just eat it with a spoon?
- Maybe try little tarts?
All of those suggestions were incorrect because obviously I went with s’mores. Oooooh these were decadent. Even if you don’t have any sweet potato pie filling at home, you can get creative and make s’mores with pretty much anything. S’mores aren’t limited to only graham crackers, chocolate and marshmallows people, trust me on this! You can try a peanut butter or Nutella s’more or even get crazy with a variety of fruits and jams. The moral of the story? Don’t not try this recipe because you don’t have sweet potato pie filling, OK?
Sweet Potato Pie S’mores
Ingredients
- Sweet potato pie filling (or any other filling you prefer)
- Graham crackers
- Chocolate
- Marshmallows
Instructions
- Heat oven to 450 degrees.
- On a baking sheet, lay out the graham crackers then top them with: pie filling, chocolate and marshmallows. Roast in the oven until the chocolate has melted and the marshmallow has browned a bit.
- Remove from the oven and top with another graham cracker.
