Simple Salmon Rice Bowl

I wish I cooked with salmon more. I love it and it’s so easy to prepare so I’m not really sure why I don’t cook with it that often. Recently, I took a trip with my friend Stephanie to Costco and seeing the price of salmon there made me wonder a couple of things: (1) why don’t I have a Costco membership and (2) why am I not buying more salmon. When I decided to make this salmon rice bowl, I was having a craving for salmon and here we are.

Are you a member of Costco or Sam’s Club? It seems pretty legit but we haven’t quite made a move yet to join. I guess for the samples alone, it may be worth it, right?

Alright back to the salmon rice bowl.

There’s no real ‘recipe’ here. It’s a bowl that has delicious ingredients I love in it. It’s really as simple as that. Salmon, rice, beans, veggies – that’s the extent of this bowl but you can certainly add in any additional ingredients you prefer.

I guess this isn’t really the first time in the last couple of months I’ve been craving salmon. Not too long ago I made a salmon BLT. Well, sort of. It was a play on a BLT. I don’t love tomatoes so I replaced the tomatoes with red bell peppers. Even if you’re a tomato-lover, you won’t miss it in the sandwich, I promise.

OK. Let’s get back on track. For this bowl, I kept it pretty simple. I seasoned the salmon with salt, pepper and Mrs. Dash garlic and herb seasoning. Then I drizzled a bit of olive oil on top and baked in an oven on 400 degrees until it was flaky. I finished it off with a little teriyaki glaze for additional flavor. For the rice, I used my best Chipotle skills and tried to replicate their cilantro lime rice. It was really as easy as cooking rice then adding in chopped cilantro and fresh lime juice.

You have to incorporate some veggies in your bowl so I decided to go with charred corn. Feel free to use whatever veggies are your favorite. For the black beans, I went the super-easy route and used my favorite brand, Bush’s. See? Putting together your own salmon rice bowl is really simple. It’s as easy as throwing together your favorite ingredients and experimenting. There’s really no wrong way to do this, guys. Trust me.
