How To: Improve Boxed Cake Mix

I’ve said on my blog many times that I don’t do a ton of baking.  Not because I don’t enjoy a baked good every now and then but simply because of the science behind baking.  One teaspoon too many and your cake (or pie) is ruined. There are times where I do enjoy doing a bit of baking and seeing the outcomes but there’s nothing wrong with cheating just a bit – that’s why boxed cake mix was created, right?  One evening, I was craving something sweet and I wanted something fast (don’t we all). I knew I didn’t want to purchase a pre-made pastry somewhere and that I wanted to bake something but I didn’t want to spend all night creating some fancy dessert.  Lightbulb! Let’s jazz up some cake mix.  So easy.

I used Duncan Hines yellow cake mix – prepare as box suggests.

Using a double boiler, melt butter (about a tablespoon), 1/4 cup of chocolate chips and a splash of heavy whipping cream.  Allow chocolate to melt; stir until very smooth.

Carefully pour chocolate into cake batter and add a handful or two of chocolate chips (preferably two).

Bake as directed by cake box.

So good – it’s even better warm.  If you’re civilized, you’ll probably wait until it’s cooled down a bit, I’m not. Enjoy!
