If whiskey is in a recipe, I’m probably going to gravitate towards it. Not only do I enjoy the occasional whiskey cocktail but I also love to cook with it; whiskey adds a little extra depth to a dish. Originally when I found this recipe, my initial thought was: this is so easy and I also thought about adding a little heat to it. I decided against changing the recipe – I like to cook a recipe at least once before making my own edits. I’m interested to try this as a slightly spicy dish but I’ll hold off until I make it again.
The only thing I did extra was season the chicken before browning it. Not a necessary step but if you like flavorful dishes, I would highly recommend doing this. Next time around, I would probably serve this mashed potatoes to soak up some of the peach whiskey juices but I opted for a less heavy side dish…well, excluding the bread.
