I follow a lot of food blogs. A few years ago, I started keeping up with Chrissy Teigen’s food blog and found myself delightfully entertained. Chrissy is engaged married to John Legend and I’m forever amused by her. Some of her social media ramblings remind me of myself so naturally I like her. Duh. One of the first recipes I made from her blog, So Delushious, was a yummy marinade. I’ve dubbed it Chrissy Teigen’s chipotle marinade. It is seriously so delicious. It’s pretty easy to put together and you can double it, hell, you can triple it if you want and have some for later.
Do you follow Chrissy Teigen on Instagram or Twitter? She’s one of my favorite accounts to follow. Between her cooking adventures, vacations and her chronicles as a mom, she’s truly a gem. I sort of feel like she’s a friend in my head. Do you have those? Friends in your head? Like celebrities who you don’t know at all but maybe you feel like you could be friends with them? I have a few – like Lena Waithe, Issa Rae and Tracee Ellis Ross. I’m sure I could come up with more but those are the top three off the top of my head.
Enough of me rambling about imaginary friends.
Chrissy Teigen’s chipotle marinade
You’ve heard me say it here, but Chrissy’s cookbook, Cravings, is one of my favorites. I don’t think this recipe is in it but it’s still an awesome cookbook. She recently announced her second cookbook AND I CAN’T WAIT. Her recipes (like this one) are approachable and very easy to replicate. I hear people say all of the time they aren’t good cooks and I don’t understand that concept. If you can read a recipe, you can at least cook something, right? Chrissy’s cookbook is perfect for the novice or self-proclaimed ‘I can’t cook’ person and even the more experienced cook.
I could talk all day about the cookbook but I’ll move on.
Please make this marinade. It is literally one of my favorites and it’s so easy. I usually make Chrissy Teigen’s chipotle marinade with chicken but I imagine it would be as delicious with shrimp or even pork. Try it!
Chrissy Teigen's chipotle marinade
Ingredients
- 2 chipotle chiles in adobo
- 3 tablespoons tequila or vodka
- 2 tablespoons fresh lime juice
- 1 tablespoon ketchup
- 1 tablespoon adobo sauce from chipotle can
- 1 garlic clove, chopped
- 2 teaspoons packed light brown sugar
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Heat oven to 400 degrees.
- Place all of the ingredients in a blender and blend until smooth.
- Place some chicken in a baking dish and pour the marinade over the chicken; bake for 45 minutes - enjoy!
