Salmon with Dijon Cream

Salmon is good for you, right?  

I think it is.  

At any rate, I love salmon.  I don’t think I make it enough but I decided to incorporate a little salmon in my life recently when I found a recipe for salmon with dijon cream + garlic butter breadcrumbs.  Really delicious. The sauce, at first, was a little odd to me – I was afraid that I was going to do something wrong and make it curdle.  Turned out ok, if I must say so myself.  The only problem is that the night I made this recipe, I was so hungry that I completely forgot to add the breadcrumbs, which were really good and so easy to make. This is what happens when you go too long without eating.  You become delirious in the kitchen.

I thought my salmon went really well with sauteed broccolini and roasted red potatoes. Interested in trying for yourself?  Here’s the recipe.
