Mmmmmm cookies.
I don’t bake a lot so when I do, I try to make it good. A couple of weeks ago I was perusing Pinterest and came across a wonderful recipe for cookies that I had to try. The recipe seemed fairly simple and not very time consuming. And because it was the holidays, I felt like I had to bake them. The original recipe called for whole wheat pastry flour but I opted for regular all-purpose flour. These were so tasty! I even made a second batch of them earlier this week.
White Chocolate Cranberry Cookies – adapted from Minimalist Baker
Ingredients
- 1/2 cup (1 stick) unsalted butter – room temperature
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1/4 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp kosher salt + more for topping
- 1 cup flour
- 1/2 cup white chocolate chips or bar chopped
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 375 and cream butter in a large bowl. Add sugars and beat until light and fluffy.
- Add egg, vanilla, 1/4 tsp sea salt and beat again.
- Sift in the flour and baking soda and mix well.
- Add white chocolate and cranberries and stir until well combined. Chill dough for 10 minutes.
- Shape cookies into 1 Tbsp balls, press down slightly onto a parchment-lined or un-greased cookie sheet and sprinkle with sea salt.
- Bake for 10-12 minutes, remove and let set on sheet for 2-3 minutes and then transfer to a cooling rack to cool completely.
