Creamy Tuscan Chicken & Potatoes

Do you remember that movie Under the Tuscan Sun? It starred Diane Lane and Sandra Oh was in it too. It is a wonderful romantic comedy (based on a book) that follows a recently divorced woman (Diane Lane) who decided to purchase a Tuscan villa on a whim. I don’t why but I love this movie (it’s probably because of Diane Lane). Even though I’ve never been to Italy, I imagine all the food there is delicious but I’m not too sure about the specifics of Tuscan cuisine, are you? I found this Tuscan chicken recipe over on The Food Cafe and from the photos alone, I was already sold.

Just based off of a simple Google search (how else do we find out about things), I learned that Tuscan cuisine is typically pretty simple. There are tons of soups and it also features ingredients that are inexpensive yet flavorful. I don’t know how this Tuscan chicken compares to what really happens in Tuscany but what I can tell you is that THIS DISH IS DELICIOUS.

I love anything that can be prepared all in one dish and for the most part/important stuff, you’ll use one major dish for this meal. You’ll definitely need an oven-safe skillet so make sure you have one of those on hand before you get started (these skillets are oven-safe up to 500 degrees). I’ll link to more oven-safe dishes at the end of the post.

Tuscan chicken: a perfect weeknight meal

This meal is packed with starchy (and yummy) potatoes, flavorful chicken and spinach. See? There are veggies in this dish. The main star of this dish: the chicken.

John loves when I use a particular process when cooking chicken. The process is very simple and definitely not something that I created. All you need is well-seasoned chicken then you pan sear until the skin is browned. Then you just finish it in the oven. It’s pretty perfect not to mention IT’S FOOLPROOF (I promise).

Usually I try to create my own recipes or take an already developed recipe and make it my own. I did not change Food Cafe’s recipe at all. Let’s be honest, it didn’t need my twist. Please make this for dinner soon. And when you do, close your eyes and pretend you’re enjoying a meal, under the Tuscan sun.
