Would you like to hear a joke? I don’t like guacamole. That’s it. That’s the punchline. I’m writing a post about a food I despise. Now, I’ve tried guacamole many times and have been slightly unimpressed most of those times. I can count on one hand the number of times I’ve actually enjoyed it. When I did like it, the guacamole has been super-flavorful, garlicky and sometimes spicy. So I decided to take matters in my own hands and try an easy guacamole recipe.
Since I’m not a guacamole lover, I needed to do a bit of research. I knew some of the basic components of guacamole but I needed to put my own spin on it. I knew that I didn’t really like it chunky. Chunky guacamole just isn’t that appealing to me – something about the texture. Sometimes when I eat sushi, I replace the avocado with cucumber because of the texture. I’m crazy that way.
The recipe that I put together is a slight combination of an Ina Garten and a Chrissy Teigen recipe. The one tip that I incorporated that’s Chrissy Teigen’s is adding cheese. Yes, you read that right: cheese. I love cheese and Chrissy Teigen hasn’t led me in the wrong direction yet with her recipes. The addition of cheese was definitely a good choice.
I decided I wanted to do something a little different with this guacamole recipe so I added caramelized onions and roasted garlic. Raw onions are OK but definitely not something I’m into on a regular basis. Caramelized onions, I can get behind. Onions take forever to caramelize but the end result will be well worth it.
The true test of my easy guacamole was going to be whether or not the husband had any. I’m proud to share that we both put aside our “guac” fears and enjoyed a night of tacos and guacamole. I can’t say I’ll make guacamole on the regular but I can say that I’m much more open to the idea of it.

Notes:
1. I used cloves from a head of roasted garlic. Here's an easy tutorial for how to roast garlic.
2. I used a small handful of cilantro. Use as much or as little as you like.
Ingredients
- 2 garlic cloves (see Note #1)
- 1/4 cup caramelized onions
- 2 Hass avocados, halved, seeded an peeled
- Lime juice (2 lime wedges, separated)
- 1/4 tsp. cayenne pepper
- 1/4 cup diced tomatoes
- 1/4 cup cheddar cheese, shredded (plus a handful more for fun)
- 1/2 jalapeño, seeded and chopped
- Cilantro, chopped (see Note #2)
- Kosher salt + black pepper, to taste
Instructions
- In a food processor, blend the onion and garlic together; set aside.
- Add the avocado to a bowl or mortar and pestle, squeeze in the juice from one of the lime wedges; mash.
- Carefully fold in the rest of the ingredients and taste. Adjust the seasonings, if needed
