Oven BBQ Chicken

Oh how I love the Pioneer Woman. Her recipes are awesome. I’ve made quite a few of her recipes and have loved, loved, loved each and every one of them. My favorite ones would definitely have to be the twice baked potatoes and her creamy potato soup; so good. What I love most about her blog is that she easily highlights and lists every step for her recipes. I don’t know how she does it – that alone takes tons of patience.

Anyway, I love making elegant and sometimes fancy foods but most times, I really enjoy making meals that are considered “down home” food, you know what I mean? [insert almost any of the Pioneer Woman’s recipes]. I found this recipe over on her blog and I instantly knew it would become a go to recipe for weeknight dinners.

Ahhh, the Pioneer Woman does it again. Oh and the best part? It’s only six ingredients…doesn’t get much better than that!

All you’ll need:

  • 1.5 cups BBQ Sauce (whatever brand you like)
  • 1/4 cup Peach Preserves
  • 1/2 clove Garlic, minced
  • Few dashes of Hot Sauce, optional
  • 6 whole Chicken Thighs, Bone-in, Skin-on
  • Olive Oil For Brushing
*you can double the recipe if you want
Heat oven to 400 degrees.
Combine BBQ sauce, preserves, garlic and hot sauce in a saucepan. Heat for 5-10 minutes or until the sauce is hot.
Drizzle a baking sheet with olive oil then place the chicken skin side down on the sheet. Roast for 25 minutes. Remove from oven and brush on the BBQ sauce on both sides. Return to the oven for 7 more minutes
Remove from oven again, and slather with more sauce. Mmmm. Roast for another 7 minutes.
One more time, take the chicken our of the oven (then turn the oven up to 425 degrees) and slather with more sauce on both sides then roast for another 7 minutes. Smells so good.
Bake some tonight – you won’t regret it!
