The Weekend + NYE Cocktails

What a busy week/weekend.  Seriously.  The holidays always throw me off just a bit.  This weekend was quite busy and entertaining.  John and I headed to Macon, GA to visit his family then to Atlanta for a Jay-Z concert. This was my fifth Jay-Z concert…I think that’s pretty normal, right?  Whatever.  I had a great time even though we were exhausted when we left.  Saturday, I stayed in bed all day, which I hadn’t done in a really long time. The rest was much-needed.  We celebrated a friend’s birthday and engagement Saturday night (see, busy weekend!) and ended the weekend with a little dinner and a movie.  We saw Wolf of Wall Street Sunday night, which I thought was pretty good.  A warning if you’re going to see it soon: it’s very long! Dicaprio was awesome though.

 

I can’t finish this post without sharing couple cocktails for NYE. There are two cocktails: one is perfect for New Year’s Eve the other would be great for a New Year’s day brunch or something.  Here we go…

Pomegranate Mimosa
pomegranate juice
champagne (or prosecco)
pomegranate seeds for garnish
mint sugar rim (optional)

Wet the rim of a champagne flute with lemon or lime juice and dip in mint sugar (see below for explanation).
Pour in a bit of pomegranate juice and top with champagne.
Add pomegranate seeds, if desired.  

So easy and perfect for just hanging out on New Year’s Day.

For the mint sugar, it’s as easy as grabbing a few mint leaves and sprinkling them with sugar.  If you have a mortar and pestle, you’ll just grind the mint and sugar together until it grainy like the sugar.  It’s so good with cocktails or fruit.

Next cocktail: 

Pomegranate Bourbon Sparkler
pomegranate juice
bourbon
champagne
mint leaf for garnish, if desired

Grab a champagne flute and add pomegranate juice.
Add a splash of bourbon and top with champagne.
Garnish with a mint leaf.

This is one is just like the pomegranate mimosa except with the addition of bourbon. Drink this one on NYE. The addition of the bourbon add just a bit more heat to it – especially important if you’re celebrating NYE in cold weather.
