Garlic Bread Grilled Cheese

Someone once told me that adults don’t eat grilled cheese sandwiches. Can you believe that? They actually said that to me and of course, I scoffed in disbelief because, grilled cheese sandwiches only get better the older you get. You’re more willing to experiment with different cheeses, add in different herbs and spices and because of that, it only gets better. I’ve been experimenting with grilled cheeses for a while but I think I’ve hit the jackpot with this garlic bread grilled cheese.

I’m not sure why I’ve never tried this before but it was extremely decadent and really cheesy. So to the person who proclaimed that adults didn’t eat grilled cheese sandwiches, you’ve clearly never tried one of these.

Do you have a specific method to how you prepare your grilled cheeses? Of course I’ve seen the tried and true butter method but I’ve also seen the mayonnaise method. Have you tried that?

Apparently you use mayo instead of butter on the bread; it makes the bread brown evenly and gives it a nice crunch. We never keep mayo in the house that often because I loathe it so I haven’t tried it. John likes mayonnaise so maybe the next time we have some in the house, I’ll give it a go. Until then, it will remain a mystery.

Garlic Bread Grilled Cheese (the best)

I’d highly suggest making your own garlic butter (recipe below) but if you’re short on time and you really just want to get going on this gooey goodness, you could simply purchase garlic bread from the grocery store.

Done and done.

But why do that when you can have the luxury of saying you made your own garlic butter. I mean, come on! AND if you make your own garlic butter chances are, you’ll have some leftover for more sandwiches or to do whatever you like another time. You could make garlic bread to accompany your dinner or you could add it to your toast for breakfast. What I’m saying is: make your own damn garlic butter – it’s so easy.

As with most grilled cheese sandwiches, you can use whatever cheese you prefer. I love using a mixture of cheese usually – you know, for optimal flavor. This time around, I used a smoky sharp cheddar and a colby jack (I think) – it was perfect. Try it with gouda or pepper jack – you could even do a mixture of cheddar and goat cheese if you’re feeling fancy. Oh and did I mention that today is national grilled cheese day (April 12)? Yep, it is. Everyone deserves to celebrate this awesome day with a decadent garlic bread grilled cheese.
