This is such an easy recipe – it’s almost too easy to post. Sriracha is one of those things that I always keep in the house because I love adding it to foods: rice, eggs or even ketchup. I find that sriracha is perfect when it’s blended with something sweet – it’s the perfect balance of sweet and spicy.
The idea for brown sugar sriracha chicken was born when I read about brown sugar sriracha popcorn. I thought the combination sounded really interesting (and delicious) but I wanted to try it on chicken. Easy marinades are great when you’re pressed for time and need to get dinner on the table quickly. Because it’s Friday, I’m keeping this post short – let’s make this chicken!
Ingredients
- 6 chicken thighs
- salt & pepper
- 2 tbsp. butter
- 4 tbsp. brown sugar
- 4 tbsp. sriracha
- 1 garlic clove, minced
- Cilantro (optional), for garnish
Instructions
- Heat the oven to 400 degrees.
- Season the chicken thighs with salt and pepper, set aside.
- In a small pot, heat the the butter, brown sugar, sriracha and garlic. Allow the butter to melt; stir to combine.
- After the butter mixture has melted, remove from the heat and pour over the chicken. Reserve some of the sauce to use later.
- Bake the chicken for 30 minutes or until chicken reaches an internal temperature of 165 degrees.
- Remove from the oven and drizzle the remaining sauce over the chicken. Place back in the oven for another 5 minutes. Garnish with cilantro.
