Easy Lemon & Shallot Roasted Chicken

Springer Mountain Farms lemon and shallot roasted chicken. An easy weeknight meal. Garlic can be substituted for the shallots.

It seems like since 2016 started, time has been passing by
at an unusually fast pace. In observing the people around me, I realized that
we’re all going 100 miles a minute with, what seems like, no end in sight. For
some, life is so chaotic that cooking appears to be a daunting task; the
complicated recipes, the expensive ingredients and the hours of prep time. I
get it. That’s why I love meals that are elegant, delicious and very easy to
prepare. What helps take some of the cooking ease off of my mind is knowing
that Springer Mountain Farms’ chicken (my brand of choice) is 100% natural.

This is legitimately a recipe that’s so effortless to put
together. There’s less than 10 minutes worth of prep time and the total meal
will take you less than an hour to get on your dinner table. The best part is
that while the chicken is in the oven, it frees up your time to prepare an easy
side dish (like a simple salad) or tackle the never-ending to do list looming
over your head.

Lemon and shallot roasted chicken with Springer Mountain Farms. An easy meal ready in less than an hour.
Ingredients
6 Springer Mountain Farms chicken thighs
3 shallots, sliced
1 lemon, sliced into wedges
Kosher salt + pepper
Oregano
Olive oil

Instructions
Heat oven to 400 degrees.

Place chicken in an ovenproof skillet or a baking dish and
add shallots and lemon wedges.

Generously season chicken with salt, pepper and oregano.

Drizzle olive oil over the chicken and roast for 40-45
minutes.
