I keep saying that I don’t bake a lot but here I am…baking…another cobbler. What’s wrong with me? In the last 3 months (maybe less) I’ve made two peach cobblers, one blueberry & peach and now this apple cobbler. This is the most I’ve ever baked. Enough of me being on my soap box. There’s a nonprofit organization here called Gaining Ground and this month for their recipe contest, the theme is apples. They’re encouraging people to not only swap recipes by entering into their contest but also encouraging cooks to use local apples. I say all of this to say: I entered this cobbler into their contest using local apples from Wheeler’s Orchard & Vineyard. I picked them up at the farmer’s market.

Brandy Spiced Apple Cider
INGREDIENTS:
sliced apples
lemon juice
dash of ground cloves
dash of cinnamon1 1/2 tsp. brown sugar
3 tbsp. brandy (any brand will do, I used Paul Masson)
1 cup of sugar
3/4 cup of milk
3/4 cup of flour
pinch of salt
2 tsp. baking powder
1 stick of butter, melted
DIRECTIONS:
preheat oven to 350 degrees
place sliced apples in a bowl and drizzle with fresh lemon juice. Season with cinnamon, cloves, brown sugar and brandy. Stir and set aside.
Make batter: combine all ingredients (except for the apples and melted butter) and mix well. Add a dash of cinnamon (if desired) and add in the melted butter.
pour batter into a baking dish and top with apples.
bake for 50 minutes.
