I generally love all things starchy: pasta, rice, potatoes – it’s all so good. I had the urge to make ravioli not too long ago but I knew I didn’t have the time or the patience to make the pasta from scratch. Easy solution? Wonton noodles. I did, however, have some time to make a homemade marinara sauce – great decision. I filled my ravioli/wonton noodles with:
– sauteed shrimp, seasoned and cut into small pieces
– sauteed spinach
– goat cheese, cut into small pieces
See? Easy. You’ll also need a little egg wash (egg + water) to seal the ravioli.
If you feel like making a marinara sauce here’s how I made mine. Pretty basic.
1 can (14oz) tomatoes (I used fire roasted but regular will be fine)
1 can (28oz) crushed tomatoes
3 garlic cloves, minced
1 onion, chopped
red wine (optional but why not?) eyeball it or about a 1/4 cup should do it. Or more.
Salt & Pepper, to taste
2 bay leaves
pinch of sugar (takes some of the acidity out of the tomatoes)
fresh herbs like: parsley, oregano or thyme
To be quite honest, I pretty much threw everything into a pot and let it simmer for a while. Tasted it throughout to make sure my seasonings were up to par and added the fresh herbs near the end. If you want to spice it up, add a pinch of crushed red pepper. I topped the ravioli with parmesan cheese when it was served. So good.
