So – I had the bright idea to make lemon soufflés. The actual process is rather easy but they didn’t quite turn out the way I wanted them to. I’m not an expert on soufflés (shocker) but I’m still a bit of a perfectionist when it comes to trying new things. One of the things I love about having a blog is that I can not only share the good that happens in my kitchen but *on occasion* I can share the not so good.
The flavor of these soufflés: delicious.
The texture: not so much.
I made a raspberry sauce to go with it but it didn’t photograph very well. The sauce, however, was so good! I think it will be perfect with pancakes. If you would like to give it whirl and try these lemon soufflés, click here for the full recipe.
The only thing I did differently is add a delightful raspberry cane sugar in each ramekin instead of regular granulated sugar.
