Ever since Lent ended, I’ve gradually started incorporating meat back in my diet. I also decided to eat more fish in my diet so I found this really simple and gorgeous recipe for tomato and thyme cod. I went to Whole Foods and purchased some fresh cod, not the cheapest I might add, and got to cooking. This recipe was so quick and easy – loved it!
I served my cod on a bed of mashed red potatoes. So good.
This looks really good and quick, I shall make for P-Diddy and Glenn, wonder if I could use trout or whiting too?
