Spicy Vodka Cream Sauce

I love pasta.  The end.

OK, I lied…not the end of the story.  I had a hankering for baked, cheesy pasta one night so I decided to whip something up (and I use the term “whip” very loosely as I cheated slightly on the sauce).  I’ve made marinara sauces from scratch, including a vodka cream sauce but this particular evening I was running a bit short on time (“short on time” = hungry), so I decided to used *jarred* sauce but doctored it up a bit.  Easy, delicious and spicy…just how I like it.

I roasted onions, zucchini squash and orange bell peppers. Then added cream, vodka, crushed red peppers and a few other spices to the sauce.  Next I layered noodles, sauce, spinach, basil and cheese.  Baked all together and magically, there’s dinner.  If you need a more structured recipe, try this one.
