I know I’ve mentioned many times that I love Mexican food…usually I go out to get it but occasionally I make it home. Not too long ago I made chicken enchiladas. The recipe closest to what I made would be an enchilada recipe from Tyler Florence, found here. The only thing I did differently, which I’ve never done before, was to deglaze the pan with white wine after cooking the chicken. The onions, garlic, jalapeño were cooked in the wine first – then other ingredients were added. Delicious!
