When baking cakes or cupcakes I like having an icing alternative…like a glaze! Recently I made a lemon glaze that I used over my blueberry scones. The glaze was very easy and would compliment any baked good. The glaze was a bit sweet; you can certainly break up the sweetness if you wish.
- In a double boiler, mix lemon just & sugar – stir until sugar is dissolved.
- Add butter & lemon zest – stir until smooth
