Breakfast Bruschetta


Recently I purchased a loaf of freshly-made bread and I was so excited (it’s the little things)!  I originally bought it to make a bruschetta idea I saw on Giada at Home.  The idea was so simple I figured why not make a breakfast version!

My bruschetta – sauteed spinach (with garlic, of course), scrambled eggs, feta & Monterrey jack cheeses. 

I had a delightful *non-alcoholic* breakfast drink to go with my breakfast bruschetta: apple + cranberry juice with fresh mint & green tea ice cubes (I made those earlier this week!).  Refreshing. 
You can make this into an “adult” cocktail easily…add a little rum!
