Pan-Seared Scallops

I’ve recently started liking scallops but I’ve never cooked them until recently. I’ve always been fearful of trying to cook them myself until a very close friend of mine told me to face my culinary fears…and so I did!
I kept it pretty simple, not wanting to over-complicate things.  I started by seasoning them with salt, pepper & crushed red pepper and seared them a bit in olive oil.
Once done, I set the scallops aside and deglazed the pan with: 
  • white wine
  • chicken broth
  • butter
  • chopped garlic
  • salt & pepper

Once my sauce reduced, I added the scallops back to the pan just for a moment to let them soak up the flavors.

Sauteed spinach – kosher salt + black pepper + olive oil 

My scallops were served over mashed potatoes and I think for my first time making scallops, they turned out pretty well if I must say so myself.

Can’t wait to try them again!
