Drunken Chicken

I love easy recipes.  Especially ones that I can make for other people, given the fact that I love to entertain.

I recently came across a recipe for Bourbon Brown Sugar Chicken on the lovely blog Sweet on You.  So, I tried.

Even though I’ve roasted a turkey before, I must admit, I was a bit intimidated about roasting this chicken.  I did alter the recipe by using Brandy instead of Bourbon. *gasp*  I also added red pepper flakes to give it a little kick.  It turned out just as delicious.

The chicken was beautiful!  I thought I cooked it too long but it wasn’t dry at all!  I served mine with homemade classic mac & cheese.  Definitely a good choice for a Sunday night dinner.
