Test Kitchen: Fresh Berries w/Sweet Cream

Who doesn’t enjoy fresh berries on a warm summer day?  I do!

On the hunt for a delicious and light dessert, I somehow found, The Pioneer Woman – an amazing blog that inspired me to try her recipe for Blackberries w/Sweet Cream.  Her instructions and pictures are far more interesting and detailed than mine, but hopefully you’ll get the picture.  Because the ingredients and process of making this dessert was so simple, I was able to scrape together all of the ingredients without going to the store…well, I did have to buy the fruit…

  
ingredients: sugar, heavy whipping cream, vanilla & eggs.  I used half of the recipe that is listed on The Pioneer Woman’s site.

pour cream in small saucepan & add sugar.  bring to a simmer, but don’t boil. 
                                                                                                                                                                 
add yolks to a bowl.  add sugar & vanilla.  once egg mixture is mixed, carefully and SLOWLY add the warm cream mixture.  Slowly, being the important factor.
add it in small increments.  You want to make sure that the eggs don’t “cook”.  gross. 
 
once the cream is added, pour into a double boiler.  over medium heat, stir gently & constantly – until the mixture has thickened.
once the cream has thickened, strain & sit in a bowl of ice to stop the cooking process.  Chill in the refrigerator for a couple of hours OR continue stirring while it’s in the ice bowl and cool it down that way if you need to serve it immediately.
at the last minute, I decided to add strawberries.  the deliciousness that awaits your mouth is beyond words!  The Pioneer Woman wasn’t lying…this is SO GOOD!  I can’t wait to make it again…soon.

**I’m thinking the next time I may substitute the vanilla for another flavor…rum perhaps??  Try this…NOW!
