Watermelon as an Appetizer?

So a while ago I made a delightful little dinner that consisted of broiled lamb chops with a strawberry balsamic reduction, fried green beans & roasted red potatoes.

I debated over what I should make as an appetizer…struggling with the pressure (from myself) of doing something “different”.  So I settled on the whole watermelon “salad” craze.  We were so excited to try it once I finished constructing it, the only picture I have is one that was taken once we started eating it…oh well.

Refreshing and tasty!  I was a little hesitant at first; watermelon & balsamic vinegar?? but it was delish.  My version of my Watermelon App:

cubed watermelon
fresh mint
crumbled feta 
balsamic vinegar

The next night I tried it again but with the leftover strawberry balsamic reduction…a little sweeter but still quite tasty!
