I feel like I preach all the time about how much I DON’T bake, which by the looks of the above photo, makes me seem like a liar. It’s not that I don’t enjoy baked goods – I do. In fact, baked deliciousness is starting to become the bane of my existence since my newly embraced “healthy-ish” eating choices. Listen, I eat lots of foods; some are good for me and some are not so good. What can I say? I love to eat and snack. I’ve always been very aware of what foods I put in my body and tried not to overdo it. However, now that wedding bells are ringing so close in my ear, I’m starting to be even more aware of what’s happening with my diet since I’m trying to “tone up”.
What does that even mean?
I say all of that to say: I baked.
I baked an orange olive oil cake that I found on Leite’s Culinaria. Simple ingredients, easy instructions and it just looked lovely. There’s also a blood orange version that just looks and sounds amazing – I love blood oranges! I didn’t change the recipe at all – so head over to Leite’s Culinaria for the full recipe. With Christmas just days away, this could be an easy, stress-free dessert for your holiday table!
Bon appetit!
