I love Mexican food and I love *attempting* to make it at home. While I was on my vegetarian adventure I still had a hankering for enchiladas so I tried spinach enchiladas with a creamy cheese sauce. These were so tasty and easy. I generally don’t like making enchiladas at home for some reason, maybe because I can never get them exactly right but these were by far my favorite.
