The weather was absolutely perfect in Tennessee this weekend! Boyfriend and I did a pre-birthday ‘staycation’ this weekend and frolicked around Chattanooga.  So much fun and a million pictures later, I’m exhausted as I type this but in a good way.  This was the perfect way to start my birthday and get ready for a new week.

Dinner Saturday night at Alleia and it was certainly a restaurant that I need to visit again.  The duck was delish!

Sunday we took a trip to the Tennessee Aquarium – we entertained ourselves, as usual.  We ended the weekend with Sunday dinner; a repeat of something I made in my ‘vegetarian days’…spinach enchiladas.

Perfect weekend.  Even more perfect, I’m working 2 days this week then I’m off to Dominican Republic!  Happy Monday!
