Curried Rice w/Shrimp

Rice & shrimp are, hands down, the easiest and most delicious foods to make.  This time around I decided to do curried rice with shrimp – I got the idea and recipe here.

To start:

I sauteed onions & carrots in olive oil.

Once the carrots & onions are soft – add garlic & curry until it’s fragrant.  Smells so good!

Next, add rice, water & salt/pepper.

Once the rice/water mixture has boiled & simmered – nestle seasoned shrimp in the rice.

Once the shrimp has cooked, fold in basil and…viola!  A delicious and quick meal.

Next time, I think instead of adding water to the rice, I’ll add chicken broth.  Just to add a bit more flavor.  Nonetheless, this was a fast and delightful dinner that will be on repeat!
