Vegetarian Options

Today is Ash Wednesday.  Though I’m not the most religious person, I’ve always continued to participate in the Lenten season.  Sacrifice is a good thing, right?  This year, I’ve decided to give up meat.  I tried this once before in college and failed at it.  I maintained a diet of rice and Chick-Fil-A french fries.  Not the most healthiest diet.  I’m not sure if I’ll continue my vegetarian diet after the 40 days are over but I’m definitely excited to try vegetarianism and be more mindful of things I put in my body.  I’ve been collecting recipes over the last few months, like the breakfast burrito pictured above, and thought I would share some of my favorites. 

basil+blood orange salad
peach & brie quesadilla
roasted veggie enchiladas
